The Chita Distillery, run by Suntory, is located on the Chita Peninsula in Aichi Prefecture, Japan. It was built in 1972 under the direction of Suntory’s second master blender, Keizo Saji. The purpose of Chita is to produce high-quality grain whisky which has traditionally served as a component (the “dashi” or broth) in Suntory’s blended whiskies, like Hibiki. In 2015, Suntory released The Chita Single Grain Whisky as a stand-alone expression—letting the grain whisky take centre stage rather than just being a blending element.
