Distillery background
Sullivans Cove was established in 1994 in Hobart, Tasmania. Over the years it has become one of Australia’s most celebrated whisky distilleries, playing a central role in the modern Tasmanian single-malt whisky revival. The distillery uses 100% Tasmanian barley, copper pot stills, and pure Tasmanian water. Sullivans Cove matured in either French oak (often ex-tawny) or American oak barrels — many of them small-batch and single-cask releases, each with limited bottle counts — which has contributed to its reputation for craftsmanship and quality.
