Founded in 1950 by Don Alfonso Jiménez Rosales, El Caballito Cerrero operates the historic Santa Rita Fábrica in Amatitán, Jalisco. The Jiménez family, with 15 generations of agave distillation expertise, produces artisanal agave spirits using traditional methods. Their Añejo Chato expression is crafted from 100% Chato agave (Agave angustifolia), a rare varietal known for its vegetal complexity.
