Founded in 1950 by Don Alfonso Jiménez Rosales in Amatitán, Jalisco, El Caballito Cerrero operates the historic Santa Rita Fábrica (established 1873). The family-run distillery is renowned for producing artisanal agave spirits using traditional methods, including brick oven cooking, open fermentation, and copper pot still distillation. Their expressions, such as the Reposado Agave Azul 46%, are crafted from 100% Blue Weber agave and aged in American oak barrels, resulting in a rich and complex flavor profile.
