We strive to source fruit across the whole Margaret River region, with the northern fruit offering intense tropical characters while the southern picks add refined focus and length to the final blend. Our Sauvignon Blanc is usually the first grape to come into the winery at the peak of its freshness, with aromas ranging from cassis bud to guava coulis. \u003c\/p\u003e\n\u003cp class=\"\"\u003eThe grapes were harvested during the cool of nights to maintain maximum freshness. Each of vineyard blocks were pressed and clarified separately then cool fermented in stainless steel to retain the fruit’s natural aroma.
