Centuries of tradition guided whisky-making, but a bold group of dairy farmers believed innovation could push it further. Their vision to improve on the old ways became the foundation of the distillery.
CHALLENGING CONVENTION
Leveraging their dairy expertise, Hellyers Road crafted unique, non-traditional pot stills that create exceptionally smooth and flavourful new-make spirits. These pioneering farmers redefined whisky making in Australia, establishing Hellyers Road as a true leader in modern whisky innovation.
MASHING
Tasmanian-grown barley is milled and mashed twice a week, using pure rainwater to create a distinctive wash—neither fully cloudy nor clear. This carefully crafted 7% ABV beer becomes the backbone of Hellyers Road single malt whisky.
FERMENTATION
Fermentation is cooled to maintain a maximum of 32°C over an average of 50 hours. A high-performance yeast delivers strong fruity character, reaching 85% attenuation within the first 16 hours. The extended ferment reduces sulphurous compounds, creating a clean, fruity and floral wash—signature to Hellyers Road whisky.
Maturation
Hellyers Road matures its whisky in coastal bond stores near Bass Strait, where cool temperatures and high humidity accelerate yet gently guide aging—often twice as fast as in Scotland. The salty sea air imparts a distinct coastal character, while the unique climate keeps alcohol levels remarkably stable even over long maturation periods.
Oak Program
Hellyers Road’s oak program showcases remarkable diversity built over 25 years, featuring premium American Oak from top bourbon producers and exceptional French Oak from leading wineries. They were pioneers in using French Oak Tasmanian Pinot Noir casks, adding freshness and complexity to their whiskies. The program also includes rare fortified and dessert wine casks—many 50 to 70 years old—sourced from Australia’s most historic producers, creating a maturation palette unlike any other.
Peated
Tasmania’s pristine landscape is ideal for whisky making but can’t produce the intensely smoky peated grain found in classic Scottish styles. To achieve this character, Hellyers Road sources its peated malt from Bairds Maltings in Scotland, a renowned supplier to iconic distilleries. The result speaks for itself—Hellyers Road’s aged peated whiskies have earned consistent awards, cementing their place as one of Australia’s leading producers of peated whisky.
