Sullivans Cove is a Tasmanian distillery founded in 1994 (now based in Cambridge, near Hobart), and is regarded as one of Australia’s pioneer single-malt whisky producers. From relatively modest beginnings, Sullivans Cove embraced traditional small-batch methods, using 100 % Tasmanian malted barley, pure local water and long (often multi-year) maturation in full-sized oak casks. Their dedication to patience and craftsmanship helped establish a new benchmark for Australian whisky — turning Tasmania into a respected whisky region on the global stage.
