Renowned for its innovative brewing methods, Asahi Shuzo focuses exclusively on Junmai Daiginjo-style sake, crafting highly polished and refined expressions. Dassai 23 is their flagship sake, named after the extremely high rice polishing ratio of just 23%, one of the most polished in the industry.
