Michel Couvreur was a Belgian‑born whisky pioneer who settled his maturation operations in Burgundy from the late 1970s. He sourced Scotch‑malt distillate and then aged it in the humid, wine‑cellar environment of Burgundy using sherry, port or wine‑seasoned oak casks — focusing on maturation as the defining element of whisky flavour.
