Heiwa Shuzo was established in 1928 in Kainan City, Wakayama Prefecture, Japan. The brewery is known for combining traditional sake brewing with the region’s agricultural character, including locally grown yuzu. Tsuru-ume Yuzushu is made by blending one-year-old Junmai sake with Wakayama yuzu juice at a distinctive 1:1 ratio, with the whole fruit including the peel used to capture sweet, sour and gently bitter citrus flavours.
